Chicken is a staple in the American diet for its high protein content and versatile uses. Soybean meal is a popular ingredient used to feed chickens for similar reasons! Soybeans are grown abundantly across the state and just one cup of soybean meal contains 55 grams of protein. Every year, Ohio’s egg, chicken and turkey farmers use about 16.2 million bushels of Ohio’s soybean crop. The Buckeye State ranks 16th nationally for broiler (meat) chicken production.

Total Time: 55 minutes


  • 3-4 boneless, skinless chicken breasts
  • 1-2 teaspoons taco seasoning
  • 2 bell peppers in assorted colors, deseeded and thinly sliced
  • 1 red onion, peeled and thinly sliced
  • 1-2 tablespoons olive oil
  • 1/2 cup shredded cheddar or Mexican blend cheese


  1. Trim the chicken breasts, then lay them in a single layer in a glass baking dish.

  2. Sprinkle the taco seasoning over the top to taste.

  3. Lay your thinly sliced onions and peppers evenly on top of the chicken breasts.

  4. Drizzle the olive oil over the peppers and onions.

  5. Sprinkle cheese over the top of the dish.

  6. Bake at 375 F for 35-45 minutes, or until chicken is cooked through to 165 F.

  7. Serve over rice.
