Easy Sweet Potato Fries

After sweet potatoes are harvested on the farm, they go through a curing process that gives them their distinct sweet taste. For seven days, they’re kept in a controlled environment as the natural curing process converts starch to sugar and enhances flavor. Then, once they’re sliced into fries, brushed with soybean oil (vegetable oil), seasoned and baked, they make a simple, healthy side!

Total Time: 30 minutes


  • 2 large sweet potatoes, peeled, cut into 1×3-inch wedges
  • 3 tablespoons soybean oil
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder


  1. Position rack in upper third of oven and preheat oven to 425 F. Spray baking sheet with non-stick spray.

  2. Place sweet potatoes and soybean oil in large bowl, toss lightly. Sprinkle with salt, pepper, paprika and garlic powder.

  3. Arrange potatoes in a single layer on prepared baking sheet, being sure not to overcrowd.

  4. Bake until tender and golden brown, about 18 to 24 minutes, turning occasionally. Cool 5 minutes before serving.
