Soy milk adds a delicious, nutty flavor and smooth texture to these mashed potatoes, but it can also be used for so much more. The dairy alternative works in any recipe, adding high-quality protein, important vitamins and essential fatty acids to whatever you whip up next.
Place potatoes and garlic in a saucepan and cover with water. Bring to a boil over medium heat.
Once boiling, reduce heat and simmer for 30 minutes or until potatoes are tender.
Add soy milk, butter, salt and pepper.
Beat with an electric mixer until smooth.
