Have you ever witnessed a debate over white versus brown eggs? While they are different colors, there’s actually no differences in flavor, quality or nutritional value. It just depends on which breed of chicken it came from and is actually associated with the color of their earlobes. Hens with white ear lobes lay white eggs while hens with red ear lobes typically lay brown eggs. Regardless of color, all chickens are fed balanced diets with ingredients like soybean meal to meet their nutritional needs. Ohio chickens alone eat over 296,000 pounds of soybean meal per year!
Total Time: 15 minutes
Sauté peppers, onion, chicken sausage and beans for 5 minutes.
Push the mixture to one side of the pan and add eggs. Cook until scrambled and mix well.
Spoon mixture over chips and top with cheese, avocado and salsa.
Serve warm and enjoy!
