Pumpkin has become a key ingredient in fall comfort foods, from classic pies and spiced lattes to quick snacks like this easy pudding recipe. The iconic fall fruit is planted in late spring and harvested about 100 days later, providing healthy nutrients such as fiber, potassium and vitamin C once making it to the kitchen.
Combine instant pudding package with 1 cup of milk.
Add pumpkin puree and pumpkin pie spice.
Refrigerate until pudding is at desired thickness. Top with whipped cream and enjoy!
